Duck in the Oven Recipe
The meat turned out sooooo tender, crisp, just delicious! very tasty!
Instructions
  1. Cut the duck into two halves along the breast. Beat the duck well, especially in the thick parts of the breast and legs. Wash the garlic, do not clean it, and crush it with a knife. Ginger cut into washers in length, I had a root of ~10 cm, it did not feel much. I marinated in the evening ( not necessarily), in a large form pour large sea salt, spread ginger and garlic, as well as sprigs of rosemary and thyme. Put half of the duck on top, season with salt and pepper and sprinkle with red paprika. Here you can find your favorite seasonings, we had enough of these.

  2. On a baking sheet covered with baking paper, the size of your oven is placed ginger (take from under the duck) and a couple of sprigs of coriander, put half of the duck skin on top of the ginger, and put the second part next to it.

  4. Cover tightly with a second baking sheet, bottom down. We put our building in the oven, preheated to 140 degrees for 2 hours and 30 minutes. The upper pan presses the duck against the lower one.

  5. At the end of time, remove from the oven, remove the top baking sheet, carefully remove the paper so as not to tear the skin (I have slightly stuck to the duck). Already it is sooooo fragrant and delicious, but not ready yet!

  6. At this stage, you can add vegetables. I cut one zucchini into pucks, one Apple and one quince into slices. It's not necessary, I just wanted to. Add the oven temperature to 200 degrees. Put back in the oven for 15-20 minutes until the vegetables are ready and the duck is browned. I turned on the grill for the last 5 minutes.
