This recipe was shared with me by a friend of a Frenchwoman from Alsace. She claims that this salad is very common in this region of France. What can I say? It is extremely tasty, tender, bright and colorful. In addition, it is prepared very quickly and is perfect for a cozy, home-made lunch or dinner.
Boil potatoes in their skins, peel and cut into cubes.
Peel the onion and finely chop, chop the parsley.
Bulgarian pepper, tomato and cucumber (if the cucumber has a dense peel, it is better to remove it) cut into small cubes.
Pour vegetable oil over the vegetables, season with salt and pepper, season with fresh cream, mix thoroughly. (In the absence of cream-fresh it can be replaced with fatty sour cream or cream. Although we have in stores this product can be found). Put on salad. Refrigerate for at least 1 hour.
