Cut the liver into pieces and pass through a meat grinder.
Grate the carrots on a coarse grater, cut the onion into cubes. Fry vegetables with cauliflower in vegetable oil.
Fry the twisted liver until half cooked, stirring constantly, for 10 minutes. Boil the rice until it is half cooked.
For the bechamel sauce, melt the butter in a frying pan, add flour. Stir the mass continuously. Pour in the cold milk gradually (in portions) and mix until smooth. Add the nutmeg and salt.
Mix the liver, fried vegetables, rice, salt and pepper sauce.
Roll out the puff pastry, put the filling in the middle. Roll out the dough in a circle. Sprinkle with grated cheese. Let the galette stand for a while (15 minutes) and bake at 200 degrees for 25-30 minutes.
