Knead the shortbread dough: cut the butter into pieces, mix it into crumbs with flour, add the yolk, salt, cold water, knead a homogeneous dough, wrap it in plastic wrap and refrigerate for 30 minutes.
Roll out the dough between 2 sheets of parchment, transfer to a baking dish greased with butter, form the sides, bake in the oven for 15 minutes at 180 C.
