Tear the spinach with your hands or slice it. Place on a platter. Cut the onion into half rings and pour boiling water over it to remove the bitterness. Place on top of the spinach. Top with diced chicken. Drain the excess liquid from the mushrooms and add the mushrooms to the chicken.
Garnish the salad with pine nuts. Add spices to taste. Make salad dressing: mix oil, balsamic vinegar and honey. Season the salad. Honey is better used with bitterness. My hair is brown.v
