- To prepare the broth, you need to take the drumstick of a turkey (chicken). Rinse in cold water, changing it two or three times. Put the turkey shanks in a deep frying pan of small diameter and fill them with cold water. Bring the contents to a boil, and then carefully remove all the foam from the surface.
