Cut the cabbage and pepper into thin strips, put it in a bowl, sprinkle with salt and lightly RUB it with your hands.
Grate the carrots, chop the garlic and coriander, remove the zest from the whole lemon with a grater and squeeze the juice from half a lemon.
Cut the tomatoes in half and grate the skin out so that it remains in your hand.
Add salt, pepper, vegetable oil, lemon juice and zest to the grated tomatoes and mix.
In a bowl, add carrots, garlic, and coriander to the cabbage and pepper. Top with a tomato-lemon mixture. Stir.
