The idea of such mini-canapes attracted me with its original presentation and ease of preparation. Adjusted the molding. Fast and delicious. Great for a buffet table, for one bite. You can take any filling that you prefer, I offer my options.
Bread. I take a loaf of fresh soft bread and ask them to cut it into thin slices on a bread slicer right in the bakery.
First prepare the filling. The description of mine is below. You can use everything you like and have at hand for filling, and from which you can prepare a spread (pate). The only condition is that it should not be either dry or liquid.
Cut the crusts off the slices of bread. Cut off the food wrap of the appropriate size so that you can wrap the roll. Put a slice of bread on the film, roll out a little with a rolling pin, not too thin. This operation will allow you to compact the structure of the bread.
Spread the filling on a rolled slice, not very thick. Roll it up carefully. This is a roll with cottage cheese filling. For the cottage cheese filling, put the cottage cheese (I have homemade, not dry), finely chopped herbs (I have Basil and parsley), lemon juice (lime), garlic passed through a press, put the salt in a small bowl of a blender (or submerged) and beat until smooth. If the curd is dry, you can add a little sour cream.
Wrap the roll quite tightly in cling film, twist the ends with candy.
Roll with a stuffing of sardines and eggs. Crush the fish with a fork, add the grated egg, a little mayonnaise and butter from the preserves. Beat everything with a fork, taste for salt.
Roll with liver filling. Add salt and pepper to the liver, quickly fry in oil (do not over-dry), 2-3 pieces are enough. Grate the carrots and finely chop the onion. Fry the carrots and onions in oil, as if for frying. Punch in a small bowl of a blender sliced liver and carrots with onions, garlic passed through the press and a little vinegar (5%). Add mayonnaise, salt, and pepper to taste.
As a result, we will get 6 rolls of candy, two with each filling. Put the blanks in the refrigerator for a couple of hours or overnight.
Get the rolls from the refrigerator and cut them into portions with a sharp knife, each time washing the knife on the principle of slicing sushi.
Personally, I prefer canapes - rolls with cottage cheese filling, tender and spicy.
