- Pour in the sweet soy sauce. Here it will be most welcome, giving the tart bitter chocolate a weak sweet and salty note. Stir the chocolate mass until it acquires a uniform color and consistency.* If you cook on gelatin instead of agar, then it should be introduced after the chocolate melts in hot milk.
