Buckwheat soak for a day in water. And then rinse.
Put the grits in a blender. Add honey, banana, flax seed (it is better to grind it into flour. I used Chia and did not grind - I like how they burst when swell). All beat. Gradually add milk, controlling the density so that the mousse does not become liquid.
Divide the mixture into 2 parts, add cocoa into one and mix.
Stack in a bowl or glass layers: berries-light layer-dark layer. And so to repeat again.
