Prepare the dough.
Rub the flour with your hands into a crumb with cold butter.
Add sugar, vanilla, salt and cottage cheese.
It is better to rub the cottage cheese through a sieve.
I was in a hurry and didn't chop it, but it's better not to do this, since the grains of cottage cheese can burn in the oven.
Knead the dough and refrigerate for 30 minutes.
Prepare the filling.
Fry the nuts in a frying pan.
Use a blender to grind nuts, sugar, butter, cinnamon and milk well to the consistency as in the photo.
Roll out the dough into a rectangle thin enough, about 3 mm.
Spread the filling evenly.
Go to the middle of the rectangle and twist two rolls, moving from the edges towards each other.
Cut into pieces about 1 cm thick.
Place the cookies on a baking sheet lined with parchment.
Bake in a preheated 180 degree oven for about 20 minutes. It is not necessary to blush too much. Immediately after baking, the cookies will become a little soft, and when cooled, they will become sandy and crispy.
