Potatoes, chicken and mushrooms are a classic trio in Russian cuisine. These ingredients complement each other perfectly. I propose a recipe for chicken fried in a pan with rosemary, garlic, lemon juice, and then baked until tender in the oven with potatoes and mushrooms.
Place the potatoes in a saucepan, cover them with cold water and salt. Bring to a simmer over high heat, then reduce heat until soft, about 8 minutes. Drain the water.
Place the rosemary leaves, garlic, 2 tsp on a cutting board. salt, red pepper flakes and chop with a large knife to a paste.
Transfer the pasta to a bowl. Add the juice of 1 lemon and olive oil.
Place the chicken fillet in the cooked marinade and stir.
Then preheat a skillet over high heat. Place the chicken fillet in it, cover and cook until browned, about 5 minutes.
Flip the chicken fillet.
Take a baking dish, transfer the fried chicken fillet into it, add the chopped mushrooms and potatoes cut into quarters, pour over the juice of the remaining lemon. Top with rosemary sprigs and lemon halves from which you squeezed juice.
Preheat oven to 230 degrees. Place the baking dish in the oven and bake, uncovered, until the chicken is cooked for 20-25 minutes.
