Potatoes, chicken and mushrooms are a classic trio in Russian cuisine. These ingredients complement each other perfectly. I offer a recipe for chicken fried in a frying pan with rosemary, garlic, lemon juice, and then baked until cooked in the oven with potatoes and mushrooms.
Put the potatoes in a saucepan, cover them with cold water and salt. Bring to a boil over high heat, and then reduce the heat to simmer until soft, about 8 minutes. Drain the water.
On a cutting board, pile the rosemary leaves, garlic, 2 tsp salt, red pepper flakes and chop with a large knife to a paste.
Transfer the pasta to a bowl. Add the juice of 1 lemon and olive oil.
Put the chicken fillet in the prepared marinade and stir.
Then heat a frying pan over high heat. Put the chicken fillet in it, cover with a lid and fry until it is browned, about 5 minutes.
Turn the chicken fillet over.
Take a baking dish, transfer the fried chicken fillet to it, add the chopped mushrooms and potatoes cut into quarters, pour the juice of the remaining lemon. On top, put the rosemary sprigs and lemon halves, from which the juice was squeezed.
Preheat the oven to 230 degrees. Place the baking dish in the oven and bake, uncovered, until the chicken is cooked for 20-25 minutes.
