The other day I came to Jamie Oliver's book "Ministry of Food", and immediately my attention was attracted by the recipe of these puddings, because in the vast Internet I found recipes... the mini-puddings. The only ones I somehow didn't turned out as beautiful as there described, but was delicious - it's a fact. Plus they were always pestering the molds... So I decided to make puddings from wonderful Oliver's book today! AII... Finally the puddings lived up to my expectations. They could be removed from the molds by hand! They didn't stick to my mold in any way... Sharing the recipe with you.
So.. Beat our ingredients in a bowl. 3 eggs, salt, flour and milk.
The resulting mass is left for 30 minutes. (Jamie's book says this is to make the dough more uniform. Due to this, the pudding will become more lush and crispy!)
While our dough is "resting". Preheat the oven to maximum! I warmed it up to 220 degrees. I think that's enough.)When the oven is sufficiently heated, put it in our molds (about 2-3 minutes). Next, take out the molds and fill in each hole with 1 tablespoon of vegetable oil! And back in the oven for 5 minutes, so that the oil is well warmed up!
After this time, we take out the molds with heated oil from the oven and quickly pour the dough! I did not do it very carefully) but it's okay... these droplets have turned into tiny puddings)
Remove the form from the dough in the oven and 15 minutes (without opening the door in any case!!!) give the puddings to rise, brown!All! Puddings are ready!
PS. A tip from Jamie Oliver: if you want the pudding to crunch all over the depth, lower the temperature to 150 degrees and bake them for another 10 minutes!
