- First of all, peel the onion and cut it into rings, you can use any onion - I have a white and red onion in half. Put the onion in a bowl and add 2 tablespoons of sunflower oil. Sprinkle with grated ginger, cinnamon, sugar and pepper ground in a mortar. Mix the onion and leave to marinate for 2 hours.
- Add a little salt and water. Cover with a lid and simmer for two hours until the meat is ready, the onion should almost boil. Add water as needed, the amount depends on how thick the sauce you want to get. Somewhere in the middle of the process, add the sauce to taste. I added a little more cinnamon, just focus on your taste.
