- 1 teaspoon Allspice (peas)
- Salt
- 1 teaspoon Sage
- 1 tablespoon Olive oil
- 1 tablespoon Lemon zest
- 50 ml Orange juice

- All dry ingredients for the marinade are crushed. I did it in my grandmother's mortar a hundred years ago. Cut the onion into small cubes. Combine the juice, zest, oil and dry ingredients with the onion. We mix it all together. We take the sleeve, send the meat and marinade into it. Carefully distribute the marinade with spices on the meat.
