We wash the meat well, dry it with paper napkins, clean it from all unnecessary films.
Squeeze the orange juice and RUB the orange zest.
All dry ingredients for the marinade are crushed. I did it in my grandmother's mortar a hundred years ago.
Cut the onion into small cubes. Combine the juice, zest, oil and dry ingredients with the onion. We mix it all together.
We take the sleeve, send the meat and marinade into it. Carefully distribute the marinade with spices on the meat.
We pack the sleeve, tightly securing it at both ends. You can also wrap the meat in plastic wrap.
Wrap the top tightly in foil and send the meat to the refrigerator for 12 hours, let it marinate well.
After 12 hours, we open the meat. Preheat the oven to 180 degrees. Meat in foil, closed, send to the oven and bake for 15-20 minutes. Then, we open the foil and bake the meat, pouring the released juice, for another 30 minutes. You need to focus on your oven, so as not to over-dry the meat.
After the specified time, the meat is ready. Delicious both hot and cold in the form of a sandwich.
