Boil water. While the water is boiling, grate the root celery on a Korean grater. The water has boiled, add the vinegar and celery. Turn off the stove, but do not remove the pan from the stove and let it brew a little (about 10 minutes).
Celery is not cooked, but steamed! It should stay almost raw, crispy!
While celery is infused in water with vinegar, make a dressing.
Sour cream mix with ground pepper, lemon juice, salt, sugar and ground ginger.
Cut pineapple and oranges.
Once the celery is infused, mix everything in a bowl and fill with dressing.
