Zucchini in the Oven Recipe
I offer a quick option for making zucchini appetizers! The idea was once suggested by a magazine and this recipe has long been its own. When hot, it is delicious and flavorful!

  1. The oven can be immediately turned on to warm up to 190 degrees. Cover the baking sheet with baking paper. Grate the mozzarella ( or other cheese).Cut the zucchini into 5 mm thick circles and brush each with olive oil (or other vegetable oil). Season with salt and pepper and place on a prepared baking sheet. Bake in a preheated oven for 5 minutes.

  2. Remove the baking sheet and lightly brush each zucchini slice with ketchup (or tomato sauce). I used to cook with kebab ketchup. Sprinkle with cheese. Top with a thin circle of sausage and sprinkle with spices to taste: oregano, thyme, Basil or a mixture of them. I have thyme and Basil here. Put the baking sheet back in the oven for another 5 minutes.
    Remove the baking sheet and lightly brush each zucchini slice with ketchup (or tomato sauce). I used to cook with kebab ketchup.
