Beet Salad with dried Apricots and Almonds Recipe

Beetroot is a unique vegetable. One of the few that practically does not lose its useful properties during cooking. And in the spring, vitamins are so needed. Therefore, I will offer you a healthy and vitamin beet salad with dried apricots, almonds and an interesting dressing with orange flavor.

Instructions

  1. Peel boiled or baked beets and cut into cubes.
  2. Chop the almonds with a knife at random.
  3. Soak dried apricots in warm water for 15 minutes, dry and cut into small pieces.
  4. For dressing, mix the oil (I took unrefined sunflower oil), orange juice, orange jam, mustard, crushed garlic and salt.
  5. Combine all the ingredients for the salad, pour the dressing and mix.
  6. If desired, you can add chopped mint to the salad or pick mint leaves from above.
