Beet Salad with dried Apricots and Almonds Recipe
Beetroot is a unique vegetable. One of the few that practically does not lose its useful properties during cooking. And in the spring, vitamins are so needed. Therefore, I will offer you a healthy and vitamin beet salad with dried apricots, almonds and an interesting dressing with orange flavor.

Ingredients
Salad
- 150 gram Beet
- 2 tablespoons Dried apricots (sliced)
- 2 tablespoons Almonds (sliced)
- 1 twig Mint
Dressing
- 2 tablespoons Vegetable oil
- 2 teaspoons Orange juice
- 1 teaspoon Jam (orange)
- 1 teaspoon Mustard
- 1 clove Garlic
- Salt (to taste)
Instructions
- Peel boiled or baked beets and cut into cubes.
- Chop the almonds with a knife at random.
- Soak dried apricots in warm water for 15 minutes, dry and cut into small pieces.
- For dressing, mix the oil (I took unrefined sunflower oil), orange juice, orange jam, mustard, crushed garlic and salt.
- Combine all the ingredients for the salad, pour the dressing and mix.
- If desired, you can add chopped mint to the salad or pick mint leaves from above.
