Ingredients
- 4 pieces Egg white
- 2 pieces Egg yolk
- 1 tablespoon Corn starch
- 1 tablespoon Cocoa powder
- 0,5 teaspoon Baking powder
- 250 gram Cottage cheese took a soft 5%
- 130 gram Banana in the purified form
- 1 tablespoon Honey to taste
Instructions
- Beat the whites with a mixer until strong peaks.
- Add the yolks one by one to the whites, beating with a mixer.
- Mix cocoa powder, baking powder and starch.
- Add the sifted cocoa mixture to the proteins in parts, each time mixing well and gently from the bottom up with a spatula or a wooden spoon - do not just MIX! I mixed the last portion with a mixer at low speed
- We got this biscuit dough.
- Gently lubricate the parchment with butter, or olive oil, or coconut - I took butter, do not lubricate the silicone mat with anything. Spread the dough and smooth it out. I made a size of 30x30 cm
- Put in a preheated 180 degree oven for 15 minutes. Focus on your oven. We take out the finished cake - do not roll it up with paper - there is no flour in it, so it rolls out perfectly. Remove the parchment. Cool.
- Cut the banana into small pieces. If desired, add cottage cheese and honey and mix.
- Roll the cake with the filling into a roll - it turns out very small, not thick. I lightly sprinkled powdered sugar (at the request of the husband waiting for the tasting). You can eat right away, you can put it in the refrigerator. I immediately cut off part of it, and put the rest in the refrigerator.
