Puffs "Autumn Leaves" with Apple Mousse Recipe
It's cold and overcast outside, and a pleasant aroma of apple pastries comes from my oven - these are delicious, tender, airy, moderately sweet puffs. I used ready-made puff pastry without yeast, and apple mousse as a filling, then I made a leaf pattern on the layer so that the baking would remind me of the warmth and charm of the outgoing autumn.

Ingredients
- 500 gram Puff pastry
- 2 pieces Apples
- 1 tablespoon Lemon juice
- 3 tablespoons Sugar
- 2 tablespoons Water
- 1 teaspoon Vanilla sugar
Instructions
- Let's make apple mousse. Peel the apples and cut them into cubes. Add lemon juice and sugar. To get a mousse of yellow apples, peel and slice the apples, immediately pour lemon juice over them, do not let the apples brown. Cook the apples in a small saucepan.
- Add water and vanilla sugar and bring to a boil, stirring occasionally. Cover the pan and cook for about 15 minutes, until the apples are soft and the water evaporates.
- Use a blender to make a homogeneous mousse, or simply mash the apples into a puree. Continue to cook the apple mousse until it thickens.
- Cool the finished apple mousse.
- Now take a sheet of puff pastry and use a cookie cutter to cut out circles from the dough. We make 8 circles, I also used the dough trimming, it turned out two more circles. Only 10 pieces.
- Place the dough pieces on a baking sheet. Put one teaspoon of apple mousse on one side of the cut circle.
- Then fold the circle in half to close the filling, and press well along the edge of the workpiece.
- Brush with beaten egg. Using a knife, carefully make a drawing of the sheet on the surface of the puff pastry, trying not to cut through it. Put the puffs in the oven. Bake at 180 degrees for 20-25 minutes. Be guided by your technique, the ovens may differ.
