Salad with Vegetable Fennel and Pepper Recipe
Vegetable (Italian) fennel has a fleshier stem, which is suitable for salads. Thanks to the essential oils and anise aroma, this amazing vegetable gives an extraordinary taste to any dish. It is rich in phytonutrients, flavonoids (including rutin and quercitin), antioxidants and phytoestrogen.

Ingredients
- 1 piece Fennel
- 2 pieces Tomato
- 1 piece Bulgarian pepper
- 1 piece Avocado
- Green Onion
- Dill to taste
- Olives green
- Capers to taste
- Vegetable oil
- Coriander
- Black pepper to taste
- Parsley to taste
- Salt to taste
Instructions
- 1. Wash the vegetables and herbs. Peel the pepper from the seeds and petiole, and the avocado from the bone and skin. If there is a stone in the olives, then it needs to be removed. 2. Grate the fennel (or finely chop). 3. Cut tomatoes, peppers and avocado into medium pieces. 4. Chop the greens and olives.
