- 400-500 gram Flour wheat / Flour
- 200 gram Corn flour
- 25 gram Yeast fresh, pressed
- 1 piece Chicken egg
- 150 ml Kefir
- 150 ml Water
- 50 gram Margarine
- 1,5 tablespoon Sugar
- 0,5 teaspoon Salt
Filling:
- 500 gram Potato puree
- 200 gram Mushrooms fried with onions
- 2 tablespoons Green Onion finely chopped + a pinch of dill
- 1 piece Chicken egg egg white in mashed potatoes, the yolk for lubrication of top
- 1 tablespoon Sour cream for lubrication before baking
- Butter for lubrication of finished products, to taste
- Seasoning to taste

- Pour in the warm yogurt + the rest of the sugar, salt, beaten egg, mix well + pour in all the flour, knead and pour in the flour, leaving a little on the kneading and signing the table. Now pour in the melted margarine. Mix well, add flour if necessary. The dough turns out to be very tender, not cooled down. Leave in a warm place for 1 hour to rise, do not forget to cover the dough dishes with a napkin.
- In the meantime, we are doing the stuffing. Boil the potatoes in the usual way for making mashed potatoes. Do not add salt. Drain all the water from the finished potatoes, leave on the stove for a minute (dry), now you can add salt to taste, pepper, add egg white. Add the prepared mushrooms fried with onions (there are lovers of pickled mushrooms to add), finely chopped green onions and a pinch of dill. Mix well and leave to cool.
- When the dough came up, increased, became lush - start cutting it. Divide into pieces (I made large buns, and I got 12 pieces), roll the pieces into equal balls and spread them on the table, after sprinkling it with flour, after 10 minutes roll the balls into tortillas, spread out at a distance from each other. Squeeze the middle out of a mold suitable in diameter and smear with egg yolk whipped with sour cream. Put the filling in the center, wrap the dough ring three times around your finger and distribute the filling around the edges. Place on a baking sheet that can be oiled or covered with oiled parchment. Brush the top with beaten egg yolk and let the dough come up for 10-15 minutes. We send it to the oven at 180 degrees for 30 minutes. In any case, control the temperature of your oven.
