Cheese Spread "Obatzda" with Carrot Crackers Recipe
Obatzda-cheese spread, which is usually served in the Bavarian Biergarten as a snack to beer. Now it is most often prepared from Camembert or other similar cheese. It is not difficult to prepare such a spread at home.
Cut Camembert cheese into pieces. If the crust is hard, it should be cut off. I had a pretty soft one, so I left it.
Mash with a fork.
Add soft butter.
Then add the paprika, cumin and salt.
Beat with a mixer until smooth. Transfer to the dish in which you will serve and put in the refrigerator for 2-3 hours to infuse.
I made carrot crackers for the cheese spread. Grate the carrots on a fine grater.
Add 100 gr. flour, salt, Saha, vegetable oil, flax seeds (1 tbsp) and sesame (1 tbsp). mix Well and leave for 5 minutes. During this time, the flour will absorb moisture and become viscous.
Then you need to evaluate the consistency of the mass, the finished mixture should be plastic and easily roll into a ball. I needed to add another 40 gr. flour, it all depends on the juiciness of the carrots.
Then transfer the carrot mass to the parchment.
Cover the top with another sheet of parchment and roll out with a rolling pin, approximately 3-4 mm thick.
Then remove the top sheet of parchment.
To cut the weight arbitrarily.
Sprinkle with sesame seeds (0.5 tbsp), flax seeds (0.5 tbsp), sunflower and pumpkin seeds. Roll again with a rolling pin to "drown" the seeds. Cook in the oven, preheated to 180 degrees, 15-20 min., no longer necessary, otherwise you can over-dry.
Before serving, garnish the cheese spread with green and red onions.
We enjoy this cheesy joy, spreading on crackers, accompanied by a cold glass of beer.
