- Peel the boiled eggs, cut into halves and carefully remove the yolks. Prepare a green avocado mousse. Cook just before serving, not in advance!! Peel the avocado and cut the flesh, sprinkle with lemon juice so that it does not darken. Add the yolks, garlic to taste (you can without it) and season with mayonnaise with lemon juice. Whisk everything well with a blender until a mousse forms.
- We will get a pale pink mousse. It remains only to stuff the egg halves with these mousses, decorate with herbs and serve to the festive table. The only thing to note is that you need to cook before serving and eat first, as the avocado will inevitably start to darken sooner or later and the view will no longer be the same.
