- Take any fillet of fish, your favorite, but not greasy... I have a pollock fillet, and for some reason it turned out to be bony - I had to sweat a little while extracting the "bonus" bones... The whole fillet will be difficult to twist, so we cut all the pieces lengthwise into two parts. If it turned out uneven and not neat, then it's okay...
