Add 200 ml of milk to the bowl and heat it up slightly. Then add the sugar (1 tablespoon), add 2 tablespoons of flour.
Then add 1 bag of granulated yeast, beat the mixture with a whisk. Cover the container with a sponge with a towel or wrap it with food wrap and put it in a warm place to activate the yeast.
As soon as a cap of small bubbles forms on the surface, the sponge is ready. Then add 2 egg yolks, add the rest of the sugar and salt (1/2 tsp). Melt the butter (150 gr.), cool it to room temperature and add it to the prepared milk-yeast mixture. Beat the mixture with a whisk.
Then gradually add the rest of the flour. Flour may need a little more, the flour is different. Replace the dough. Cover the container with the dough with a towel and leave it to rise. After the first rise, knead the dough and put it to rise again. Then you can start forming the rolls.
Divide the dough into equal pieces, in my case, the weight of each piece is 50-55 gr. the Pieces are rolled into balls, put the balls on a flat dish or cutting Board and cover with a towel or food wrap, so that there is no zavetrivanie pieces.
Next, roll each ball into a circle and make cuts, as in the photo.
Then fold the blank in half.
Form a bow.
Put the formed buns-bows on a silicone baking Mat or parchment and put on a proofing (10-15 min.). then grease with beaten egg. Sprinkle the middle with fried and crushed almonds. Send the rolls to the oven preheated to 190C and bake until Golden.
