Quail wash, and well spread jam with whiskey. Leave to marinate for at least an hour, a maximum of 2 days.
4 strips of bacon finely chopped.
Peel and finely chop the onion.
Garlic crush the flat side of a knife then finely chop.
In a frying pan lightly fry the bacon and onions, then add the garlic.
Add breadcrumbs, olive oil and stir.
Add chopped parsley, salt, pepper, mix and turn on.
Stuff the quail with minced meat.
Wrap each bacon, fasten with a toothpick and place in a baking sleeve.
Pour the remaining marinade, close the sleeve and bake in a preheated 220 degree oven for 20-25 minutes. For a crisp a few minutes before ready, the sleeve can be opened and bake without it the remaining time.
