Grate the carrots and beets on a Korean carrot grater.
Pour boiling water over the raisins, wash the dried apricots and cut them into strips.
Cut the nuts coarsely with a knife.
For dressing, take the boiled yolk and grind it in the processor.
Now add salt, sugar, mustard, and cottage cheese.
All punch until smooth.
Try it to your taste, you may want to adjust something for salt or acid.
Now add the olive oil and punch again until smooth.
The dressing is ready.
Now mix everything and you are ready.
Sometimes I add garlic and get a different taste.
