Cook Time 60 minutes
Ingredients
- 5 pieces Egg
- 150 gram Sugar
- 20 gram Vanilla sugar
- 0.5 pieces Lemon
- 80 ml Sunflower oil
- 150 gram Flour
- 100 gram Poppy (ground)
- 400 gram Red currant
- 3 tablespoons Sugar powder
Instructions
- Wash the currant, dry it, clean it from the stem (I do it with a fork). If you don't have a ground poppy, just grind the poppy in a coffee grinder.
- Remove the zest from half a lemon.
- Separate the yolks from the whites. Whisk the whites into a tight foam with half the sugar.
- Whisk the yolks with the second half of the sugar and vanilla sugar. Add lemon zest and whisk, gradually adding sunflower oil.
- Add the beaten egg whites to the yolk mass. Stir lightly.
- Add flour, poppy seeds and currants. Gently mix with a spatula.
- Grease the baking dish with butter, sprinkle with flour and pour the dough onto a baking sheet. You can bake in a mold with a diameter of 25 cm, I baked in a round cake mold.
- Put the pie in a preheated oven and bake at 160 degrees for about 45-50 minutes. Readiness, as always, we check with a match. Cool the finished cake completely and remove it from the mold.
- Sprinkle the cake with powdered sugar and decorate with brushes of red currant and mint leaves.
