Ingredients
For shortbread dough:
- 250 gram Flour wheat / Flour
- 3 pieces Egg yolk
- 130 gram Butter
- 60 gram Sugar
- 1 pack Baking powder
- 1 pinch Salt
- 1/2 teaspoons Vanilla essence
For filling:
- 4 pieces Apples
- 250 gram Cottage cheese
- 3 tablespoons Sour cream
- 3 tablespoons Sugar
- 3 tablespoons Starch
- 3 pieces Egg white
Instructions
- Add soft butter (130 g), sugar (60 g), egg yolks (3 pcs.), salt (1 tbsp.l.) to a bowl.
- Add vanilla essence (1/2 tsp.). Beat the mixture well.
- In a separate bowl, mix all the dry ingredients: flour (250 gr.), baking powder (1 pack). Mix the egg-butter mixture and the mixture of dry ingredients. Knead a soft dough.
- In a detachable mold (a mold with a detachable bottom), put the shortbread dough, spread it over the entire surface. To make boards. Put the form aside.
- Wipe the cottage cheese (250 gr.) through a metal sieve. This step should not be ignored. Cottage cheese should have a smooth, fine, homogeneous structure. Add sour cream to the cottage cheese (3 tablespoons).
- Whisk egg whites (3 pcs.) together with sugar (3 tablespoons without a slide) until stable peaks. Add whipped whites with sugar to the curd-sour cream mass, add 3 tablespoons of starch. Mix well.
- Peel the apples (4 pcs.) from the peel, remove the core and cut into cubes. Place the apple cubes in a dry frying pan and add 1 tablespoon of sugar. Simmer the apples until the excess moisture and light softness evaporate. The photo shows that there is no moisture on the bottom.
- Add the prepared apples to the curd mixture. The mixture is mixed.
- Put the cheese-apple mixture on a shortbread cake. We send the form to the oven, preheated to t180-190 * C, for baking. Bake until the surface of the curd mass is slightly browned.
- Remove the finished cake from the mold.
