- Knead the dough on a floured surface until smooth but still soft. You may need slightly more than the required 200 grams of flour. Form the dough into a ball and place it in a bowl. Cover the bowl with a napkin or foil and let the dough rise in a warm, draft-free place for about an hour and a half. I usually place it in a cold oven.
