- In a bowl, sift and mix flour, cocoa powder, salt and baking powder. I always cook the latter myself, the quality of the purchased baking powder, alas, leaves much to be desired. In order to get a high-quality and reliable baking powder, you only need to mix two parts of baking soda and citric acid and one part of flour and starch each. Sift the mixture and use according to the recipe. The newly caught citric acid crystals are downright gigantic! I had to grind it in a mortar additionally.
- With a glass of the right diameter, I cut off the excess. The "trim" subsequently switched to dessert with fresh berries, mascarpone and whipped cream. And put half of the marshmallows on the workpiece, slightly pressing down with your hand. Put the baking sheet with the cakes back in the oven for a couple of minutes.
- Meanwhile, prepare the glaze. Of course, you can simply melt a chocolate bar in a microwave oven or in a water bath, add 50 ml of heavy cream, mix and cover the finished cakes. Or use your own proven recipe. And you can try mine. This glaze is in my recipes, but I'd rather tell you here so as not to be distracted. With icing, the situation is even simpler than with cakes. The main thing is, at the beginning of the dessert preparation process, do not forget to put a jar of boiled water in the freezer. In a bowl, mix 6 tablespoons of cocoa powder and powdered sugar and 3 tablespoons of starch and sift. Now we take out ice water and, stirring constantly, add a spoon to the dry mixture to the desired consistency.
