I have boiled mushrooms passed through a meat grinder.
Pour the oatmeal into a bowl and pour boiling water over it. Water should slightly cover the top of the flakes.
Close the flakes on top with a lid and leave for 10 minutes to steam and soak up the water.
Take a large onion. Here it plays a huge taste role. Cut the onion into small pieces and fry in vegetable oil until Golden. To cool down a bit. Boil the eggs and grate.
Add swollen oatmeal, onion, and grated eggs to the mushrooms. Mix everything well into a homogeneous mass. Add salt and seasoning. Add the starch to the mass and mix well again. If the mass is watery, add another half a spoonful of starch.
I did not add eggs this time, because I was preparing a lean version. Pour the flour into a wide flat plate. With wet hands, shape the cutlets, roll well in flour and fry over medium heat until Golden brown.
