Ingredients
Dough:
- 400 gram Flour wheat / Flour
- 1 glass Water room temperature
- 3 tablespoons Vegetable oil
- 1/2 teaspoon Salt
Filling:
- 400 gram Canned beans
- 300 gram Cabbage
- 1 piece Onion large
- 1 piece Carrot medium
- 200 gram Mushrooms I have whites
- 8 tablespoons Vegetable oil
- 3 cloves Garlic
- 2 pieces Bay leaf
- 1/2 bunch Greenery parsley and dill
- Salt to taste
Sauce:
- 1 piece Onion little
- 1/4 pieces Bulgarian peppers large
- 1/2 bunch Greenry
- 8 tablespoons Tomato mashed
- 1 teaspoon Seasoning (Provence herbs)
- Salt to taste
- Black pepper to taste
Instructions
- Dough. In a deep bowl, pour 1 cup of water, dissolve the salt, add oil. Add flour. Knead the elastic dough. Cover with cling film and set aside.
- Proceed to the preparation of a multicomponent filling. To do this, we will chop the peeled vegetables: finely chop the cabbage, cut the onion into small pieces, and grate the carrots on a coarse grater. Now send them to the oil heated in a frying pan (5 tbsp. l.), add the bay leaf and salt and simmer for 25 minutes.
- Free the pan by transferring the vegetables to a deep container and removing the bay leaf. Now fry the mushrooms on 3 tablespoons of oil, pre-slicing them into small slices, for 10 minutes on high heat, stirring constantly.
- Transfer the mushrooms to the cabbage, add the beans (drain the water), finely chopped garlic and herbs.
- Whisk all the ingredients into a homogeneous mass using an immersion blender.
- Start sculpting. Roll out the dough on a floured surface in the form of a sausage and divide it into 24 parts. We'll cover him halfway so he doesn't get wet. Take a piece of dough, roll out / knead with your hands, put out a tablespoon of filling.
- And do it as in the photo.
- With a knife, we make a hole-hole on top.
- So, we sculpt all the manta rays. As a result, we get 24 pieces.
- Prepare the manti in a couple of 10 minutes in a convenient way, be sure to lubricate the bottom with oil. (We freeze the rest.) I do it.
- Meanwhile, prepare the sauce. Finely chop a piece of bell pepper, peeled onion, herbs. Add tomato puree (I have tomato mass prepared in the summer). Add salt, pepper, and a spoonful of dried herbs.
- Serve hot manti on a large plate with sauce in the center. We eat with our hands)) Enjoy your meal!
