Muffins with Pumpkin and Dried Fruit Recipe
I suggest you try very interesting cupcakes without sugar and wheat flour, the idea of which I read in one of the blogs about healthy eating! Fragrant, rich, sweet and cute! They are made from oatmeal, pumpkin puree and dried fruits!

Ingredients
- 130 gram Date
- 130 gram Dried apricot
- 110 ml Vegetable oil
- 130 gram Vegetable puree pumpkin
- 3 pieces Chicken eggs
- 120 gram Oat flakes
- 2 tablespoons Cocoa powder
- 1 pinch Salt
- 1 teaspoon Baking powder
Instructions
- Dried apricots, dates (pre-remove the seeds) cut into small pieces, put in a blender bowl.
- Add pumpkin puree and vegetable oil.
- Grind with a blender to a homogeneous mass.
- In a separate bowl, beat the eggs into a fluffy mass.
- Add the fruit mass to the egg mass and gently mix with a spatula.
- In a separate bowl, combine the oatmeal, cocoa, baking powder and a pinch of salt. Stir.
- Sifting, add the flour mixture to the egg-fruit mixture, mix gently and thoroughly. The dough is thick and does not drain from the spoon.
- Spread the dough on the forms for baking cupcakes ( I got 8 PCs.) and send it to bake in a preheated 180 degree oven for 20-25 minutes .
- We check the readiness with a wooden skewer and focus on the features of our oven.
