Gingerbread Cake-Cupcake Recipe
During the New Year holidays, many people bake gingerbread. And to be honest, I really love them for their aroma and taste, but I don't like to mess with them. So I chose this recipe, where everything is made much easier, and the taste is simply amazing. In general, the original recipe is called gingerbread cake, but through the whole kitchen I could not find a round shape, as they say "cleaned up, so cleaned up". So I made it in a cake mold, and it didn't really look like a cake. Although it did not affect the taste. So if you like chocolate cakes, this recipe will definitely appeal to you.

Ingredients
Dough:
- 125 gram Butter
- 3 pieces Chicken eggs
- 2 glasses Flour wheat / Flour
- 1,5 glasses Sugar
- 1 glass Milk
- 5 tablespoons Jam
- 1 teaspoon Soda
- 2 teaspoons Seasoning for gingerbread
- 5 tablespoons Cocoa powder
Glaze:
- 150 ml Cream (33%)
- 100 gram Dark chocolate bitter
- 30 gram Butter
Decoration:
- 2 teaspoons Coconut shavings
- Cranberries to taste
- Rosemary to taste
Instructions
- Prepare all the necessary ingredients for making a gingerbread cake-cupcake.
- In a saucepan, add sugar, cocoa and mix. Add the butter and pour in the milk. Put everything on medium heat and bring to a boil. Cook until smooth. Remove from heat and cool to room temperature. In general, this can be done in advance, for example, in the evening, and in the morning will prepare a cake-cake.
- In a bowl, combine the flour, spices and baking soda. I have a special spice mix for gingerbread, you can add spices to your taste.
- Combine both masses and mix until smooth. Do not beat, but just mix.
- Add the jam to the dough. You can take any thick, homogeneous jam or jam.
- Separate the whites and yolks. Add a pinch of salt to the whites and whisk until thick peaks form. Continuing to beat, add the yolks and whisk for another 1-2 minutes.
- Put the beaten eggs in the dough and mix everything carefully, from bottom to top, until the dough is smooth.
- A baking dish, preferably round and with a hole in the middle and a diameter of 24 centimeters, I have for a cake 25*12 and a height of 8 centimeters, brush with vegetable oil and sprinkle with flour. Transfer the dough to it and smooth it out.
- Place in a hot oven and bake for 40-50 minutes at 180 degrees, until the skewer is dry. Remove the mold from the oven and allow the cake to cool completely before removing it.
- For the glaze, heat the cream, but do not boil. Remove from heat, add butter and chocolate. Mix everything until smooth.
- Pour the finished icing over the cooled cake-cake.
- While the glaze is not frozen, decorate the surface. I did it with cranberries, coconut shavings and rosemary. Place in a cool place until the glaze is set.
