Ingredients
For the dough:
- 2 glasses Flour wheat / Flour on 200ml
- 1 tablespoon Sugar
- 3 tablespoons Sour cream no slide
- 1 piece Chicken egg
- 70 gram Butter
- 1 teaspoon Soda
- 1/3 teaspoon Salt

Instructions
- In a bowl, mix all the dry ingredients: flour (2 cups), soda (1 tsp), salt (1/3 tsp).
- In a separate bowl, mix the egg (1 pc.), sour cream (3 tablespoons) and sugar (1 tbsp.l.).
- Beat the mixture until smooth.
- Add softened butter (70 gr.) to the flour mixture.
- Chop the butter and flour into crumbs.
- Add flour and soda to the butter-flour mixture.
- Knead the dough. The dough should be soft and plastic. Wrap the dough in plastic wrap and leave for 20-30 minutes.
- Then roll out the dough to a thickness of 3-5 mm. with a donut blank and a round cookie cutter, cut out the circles.
- Put 1 teaspoon (with a slide) of jam on each circle, smear along the contour of the open surface with a beaten egg (to better connect the upper ring). Cover the surface with a second ring of dough.
- At the edges of the cheese cakes, make pockets with a "string".
- Place the cheesecakes on a baking sheet covered with parchment, then grease the cheesecakes with beaten egg and send them to the oven, preheated to t180-190C. Bake until golden brown.
- Sprinkle the finished chilled cheesecakes with powdered sugar.
